These oysters began out of a need for more space. We were running out of cage space and started bottom planting as a way to create more space on our lease. Since these oysters finish growing on the bottom of the river, they have an earthy, complex taste that is a nice departure from what an oyster is expected to taste like. The shells turn a beautiful green due to the minerals in the river bottom.
